Kwame Fia-Foli is a chef who identifies with sustainability and the marriage of cultural heritage and modern techniques. His passion for food and local ingredients is seen through carefully curated fine dining experiences with bold African flavors and also highlighting underutilized crops and species.
It is said that art imitates nature. He sees the poetry that exists in nature and more importantly between ingredients. The stories he tells are reflective of that kind of poetry. This edition of the tropical bliss dining experience is called the unknown because there will be a showcase of ingredients that have been underutilized to the extent of being forgotten.
